For the Garlic Shrimp:
½ lb (225 g) large shrimp, peeled & deveined
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
½ tsp paprika
¼ tsp salt
¼ tsp black pepper
For the Mushroom Topping:
1 cup sliced mushrooms
1 tbsp butter
¼ tsp salt
¼ tsp black pepper
For the Loaded Baked Potatoes:
2 large russet potatoes
1 tbsp olive oil
½ tsp salt
1 cup steamed broccoli florets
¼ cup shredded cheddar cheese
2 tbsp sour cream
For Garnish:
Lemon wedges
Instructions
Preheat oven to 400°F (200°C).
Rub potatoes with olive oil and salt. Pierce with a fork and bake for 50–60 minutes until tender.
Slice open and fluff the inside. Top with broccoli, cheddar, and sour cream.
