Step 2: Mix the Cheese
In a bowl, combine the shredded cheddar and grated Parmesan. Mix well, using your hands if needed—the mixture should feel slightly tacky and hold together when pressed.

Step 3: Form the Bites
Scoop about 1 tablespoon of the cheese mixture and flatten it into a small round. Place an olive in the center, then wrap the cheese around it, rolling gently into a smooth ball. Make sure the olive is fully covered to avoid leakage during baking.

Step 4: Bake
Place the bites on the prepared baking sheet with space between each one. Bake for 12–16 minutes, until the cheese is bubbling and the edges turn golden brown.

Step 5: Rest Before Serving
Let the bites cool on the tray for 3–5 minutes before handling.

Tip: As they cool, the cheese firms up into a crisp shell. Moving them too soon may cause them to fall apart, but after resting, they become firm and easy to pick up.
