Preheat oven to 375°F / 190°C. Line a baking dish with parchment or lightly grease.
Pat salmon fillets dry and cut a pocket into the thickest part of each fillet. Season with salt, pepper, and paprika.
In a bowl, mix chopped shrimp, crab meat, cream cheese, mayonnaise, Parmesan, garlic, parsley, dill, lemon juice, salt, and pepper until smooth and well combined.
Stuff each salmon fillet generously with the seafood filling. Place in baking dish and drizzle lightly with olive oil and melted butter. Sprinkle Parmesan on top if using.
Bake 18–22 minutes until salmon is cooked through and top is lightly golden.
Serve warm with fresh lemon wedges.
