Easy Vegetable Galette

This easy vegetable galette is a rustic pie, baked on a flat surface. A few shortcuts make the baking easier: refrigerated pie crust, frozen mixed vegetables, and Boursin cheese take much of the effort out of making this luxurious, savory pie.

Ingredients

Original recipe (1X) yields 6 servings
  • 1 (9 inch) refrigerated pie crust dough
  • 3 1/2 cups frozen mixed vegetables, thawed and drained
  • 2 slices bacon
  • 1/2 cup finely chopped onion
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1 (5.2 ounce) package spreadable French cheese, such as Boursin® Garlic and Fine Herbs flavor Gournay cheese
  • salt and freshly ground black pepper to taste
  • 1 large egg, beaten with 1 teaspoon water
