This easy vegetable galette is a rustic pie, baked on a flat surface. A few shortcuts make the baking easier: refrigerated pie crust, frozen mixed vegetables, and Boursin cheese take much of the effort out of making this luxurious, savory pie.

Original recipe (1X) yields 6 servings
- 1 (9 inch) refrigerated pie crust dough
- 3 1/2 cups frozen mixed vegetables, thawed and drained
- 2 slices bacon
- 1/2 cup finely chopped onion
- 1 tablespoon all-purpose flour
- 1 cup heavy cream
- 1 (5.2 ounce) package spreadable French cheese, such as Boursin® Garlic and Fine Herbs flavor Gournay cheese
- salt and freshly ground black pepper to taste
- 1 large egg, beaten with 1 teaspoon water
