1. Preheat the oven to 400°F (200°C).
2. Season the lamb chops:
Pat dry, then season both sides with salt, pepper, garlic powder, rosemary, and thyme.
3. Sear the lamb chops:
Heat 1 tbsp olive oil in a skillet over medium-high heat.
Sear lamb chops for 1–2 minutes per side until golden brown.
Remove from the pan and let cool slightly.
4. Prepare the crust:
In a small bowl, mix breadcrumbs, Parmesan, garlic, parsley, and olive oil until crumbly.
5. Coat the chops:
Brush the tops of the lamb chops with Dijon mustard, then press the breadcrumb mixture firmly onto each.
6. Bake:
Transfer to a baking sheet and bake for 8–10 minutes (for medium doneness) or until the crust is golden and crisp.
7. Rest & Serve:
Let the lamb chops rest for 5 minutes before serving.
Garnish with fresh herbs or a drizzle of lemon juice.
