Chocolate Strawberry Swirl Cheesecake

 

 

1. Prepare the crust: Preheat your oven to 180°C (350°F). In a food processor, crush the chocolate digestive biscuits until they resemble fine crumbs. In a mixing bowl, combine the crumbs with the melted butter and mix until well combined. Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool.
2. Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the sour cream, melted chocolate, eggs, and vanilla extract. Mix until fully combined and smooth, ensuring there are no lumps.
3. Prepare the strawberry swirl: In a separate bowl, combine the strawberry puree with the powdered sugar. Mix well until the sugar is dissolved and the puree is smooth.
4. Assemble the cheesecake: Pour half of the chocolate cheesecake filling over the cooled crust. Then, drizzle half of the strawberry puree on top. Use a knife or a skewer to gently swirl the strawberry puree into the chocolate filling. Pour the remaining chocolate filling over the top, and then add the remaining strawberry puree, swirling again to create a marbled effect.
5. Bake the cheesecake: Place the springform pan in the preheated oven and bake for about 50-60 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for about an hour to cool gradually.
6. Chill: After the cheesecake has cooled, remove it from the oven and refrigerate for at least 4 hours, preferably overnight, to allow it to set completely.
7. Serve: Once chilled, carefully remove the cheesecake from the springform pan. Slice and serve on a simple white plate. Optionally, garnish with fresh strawberries on top for an extra touch.

– For a more intense chocolate flavor, use high-quality dark chocolate.
