Cajun Chicken with Sautéed Asparagus & Pepper Medley

 

 

 

Season the chicken:
Mix all Cajun spices together.
Rub chicken evenly with olive oil and coat generously in seasoning.
Sear the chicken:
Heat skillet over medium-high heat.
Cook chicken 5–6 minutes per side until deeply caramelized and internal temp hits 165°F.
Let rest 5 minutes, then slice thickly.
Cook the asparagus:
In the same skillet, add olive oil.
Add asparagus and cook 4–5 minutes until tender with slight blistering.
Season lightly.
Sauté the peppers & onions:
Add sliced bell peppers and onion to the pan.
Cook 4–5 minutes until softened but still vibrant.
Add garlic in the last minute and stir.
Plate it up:
Arrange sliced Cajun chicken on one side.
Lay asparagus neatly beside it.
Spoon pepper and onion medley over the asparagus.
Drizzle any remaining pan juices over the chicken.
Boom. Bold, juicy, colorful, and straight-up dinner goals.
