Steak, Scrambled Eggs & Loaded Home Fries for Lunch

Ingredients:

• 1 steak (6-8 oz) 🥩
• 2 eggs 🥚
• 1/2 cup shredded cheese 🧀
• 2 large potatoes, cubed 🥔
• 4 strips of bacon, diced 🥓
• 1/2 onion, chopped 🧅

Directions:

1️⃣ Cook the diced bacon in a skillet over medium heat until crispy. Remove and set aside on paper towels.
2️⃣ In the bacon drippings, add the chopped onion and cubed potatoes, and cook until the potatoes are golden brown and tender, about 10-15 minutes.
3️⃣ While the potatoes are cooking, season the steak with salt and pepper, then grill or pan-sear to your desired doneness. Allow to rest, then slice.
4️⃣ In a separate bowl, whisk the eggs and scramble them in a non-stick pan until cooked through.
5️⃣ To serve, layer the potatoes on a plate, add the scrambled eggs, top with cheese, crumbled bacon, and finish with sliced steak.
