2. Add the Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens and starts to bubble gently.
3. Incorporate the Cheeses: Remove the saucepan from the heat and stir in the cheddar and Monterey Jack cheeses until fully melted and smooth. If the sauce is too thick, add a little more milk to reach your desired consistency.
4. Season to Taste: Add salt, pepper, and any optional spices to taste. Mix well and adjust the seasoning as needed.
