My neighbor brought this classic recipe to a potluck, and everyone was asking for the recipe before the night was over. Made with just 4 simple ingredients, it’s the kind of easy comfort food that disappears fast every single time.

 

 

Step 1: Prepare the potatoes
Preheat the oven to 425°F. Arrange the sliced potatoes in a single slightly overlapping layer on a foil-lined baking sheet.

Step 2: Roast the potatoes
Bake for 20–25 minutes, flipping once halfway through, until the potatoes are golden brown and crisp around the edges.

Step 3: Add toppings
Move the roasted potato slices closer together on the baking sheet. Sprinkle evenly with shredded cheddar cheese and crumbled bacon.

Step 4: Melt the cheese
Return the pan to the oven for 5–8 minutes, or until the cheese is fully melted and bubbling.

Step 5: Finish and serve
Remove from the oven and immediately sprinkle with sliced green onions. Serve hot with sour cream, ranch, or your favorite dipping sauce.
