My dad used to make these simple foil packet dinners on busy nights, and they quickly became a family favorite. With just 4 basic ingredients, everything cooks together into a tender, flavorful meal with almost no cleanup. They’re easy, budget-friendly, and perfect for weeknights, camping trips, or anytime you want a hearty homemade dinner without a lot of work.

 

 

  1. Peel and thinly slice the potatoes and carrots. Divide them evenly among 4 heavy-duty foil trays or large foil sheets shaped into packets.
  2. In a bowl, gently combine the ground beef with the onion soup mix. Form into 4 equal patties.
  3. Place one beef patty on top of each portion of potatoes and carrots.
  4. Fold or crimp the foil edges upward to help keep the juices contained while cooking.
  5. Arrange the foil trays or packets inside the slow cooker.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3½–4 hours, until the vegetables are tender and the beef is fully cooked.
  7. Let rest for a few minutes before serving hot with the flavorful juices spooned over the top.
