I’ve been making these for about a year now… everyone is obsessed — they seriously can’t stop eating them! 😄

2. Prepare Ingredients

  • Peel and thinly slice potatoes. Chop onion and shred cheddar cheese.

3. Brown Ground Beef

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and onion; cook until beef is browned and onion is softened.
  • Drain any excess grease.

4. Prepare Casserole Layers

  • In a small bowl, mix cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
  • In a greased 9×13-inch baking dish, layer half of the sliced potatoes, followed by half of the beef mixture and half of the shredded cheese.
  • Repeat with the remaining potatoes, beef, and cheese.

5. Pour Soup Mixture

  • Evenly pour the prepared soup mixture over the layered casserole.

6. Bake

  • Cover the dish with aluminum foil and bake for 60–70 minutes, or until the potatoes are tender.

7. Garnish & Serve

  • Remove foil, sprinkle with chopped parsley, and let cool a few minutes before serving
