Use a serrated knife to remove the crusts from each slice of bread. (Save the crusts for breadcrumbs or snacking!)
Step 3: Slice the Cucumber
Wash the cucumber. Slice into very thin rounds (about ⅛-inch thick). An English cucumber works best—it has fewer seeds and thinner skin.
Pro tip: Pat the cucumber slices dry with a paper towel to remove excess moisture. This prevents soggy sandwiches.
Step 4: Assemble the Sandwiches

Spread a thin, even layer of the cream cheese mixture on one side of each bread slice.

Arrange cucumber slices on half of the bread slices (about 3-4 slices per sandwich).

Cut each sandwich into quarters (triangles are traditional, but squares or fingers work too). Arrange on a serving platter.
