Best Chili

 

 

1. Heat olive oil in a large Dutch oven or heavy pot over medium-high heat.
2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
3. Add onion and bell pepper and cook for 5 minutes until softened.
4. Stir in garlic and cook for 30 seconds until fragrant.
5. Add chili powder, cumin, paprika, oregano, cayenne, salt, and black pepper. Stir for 1 minute.
6. Mix in tomato paste and cook for another minute.
7. Add diced tomatoes, tomato sauce, beef broth, kidney beans, and pinto beans.
8. Bring the chili to a gentle boil.
9. Reduce heat to low, cover partially, and simmer for 1½ to 2 hours, stirring occasionally.
10. Taste and adjust seasonings as needed.
11. For the best flavor, let the chili rest for 10 minutes before serving.
12. Serve hot with your favorite toppings and cornbread on the side.
