Nanaimo bars

Since we’ve been talking about rich, layered Southern comfort, it’s time to head North! Nanaimo Bars are a legendary Canadian dessert that require absolutely no baking.

They are named after the city of Nanaimo in British Columbia and consist of three distinct, decadent layers: a chocolate-coconut-graham base, a thick custard middle, and a snappy chocolate ganache top.


The Classic Three-Layer Nanaimo Bar

Layer 1: The Base (The Crunch)

  • 1/2 cup Unsalted Butter

  • 1/4 cup Sugar

  • 5 tablespoons Unsweetened Cocoa Powder

  • 1 Egg (beaten)

  • 1 ¾ cups Graham Cracker Crumbs

  • 1 cup Shredded Coconut (sweetened)

  • 1/2 cup Finely Chopped Almonds (optional)

Layer 2: The Middle (The Custard)

  • 1/2 cup Unsalted Butter (softened)

  • 3 tablespoons Heavy Cream

  • 2 tablespoons Custard Powder (Bird’s Custard Powder is the tradition—do not use instant pudding!)

  • 2 cups Powdered Sugar
