Creamy Cajun Seafood Bisque

🛒 Ingredients (Serves 4)

For the Seafood:
1/2 lb raw shrimp, peeled and deveined
1/2 lb lobster meat (clawed or tail, chopped)
1 tbsp butter
1/2 tsp Cajun seasoning
1/4 tsp salt
1/4 tsp black pepper
For the Bisque:
2 tbsp butter
1 small onion, finely diced
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups seafood stock (or chicken broth)
1 cup heavy cream
1/2 cup whole milk
1/2 cup crushed tomatoes
1 tsp Cajun seasoning (adjust to taste)
1/2 tsp smoked paprika
1/4 tsp cayenne (optional)
Salt & pepper to taste
Garnish:
Fresh chopped parsley
Extra cracked black pepper

Cook the seafood:
Melt 1 tbsp butter in a skillet over medium heat. Season shrimp and lobster with Cajun seasoning, salt, and pepper. Cook shrimp 2–3 minutes per side until pink. Remove and set aside.
Build the base:
In a large pot, melt 2 tbsp butter. Add onion and cook until soft (about 4 minutes). Stir in garlic and cook 30 seconds.
Sprinkle in flour and whisk continuously for 1–2 minutes to form a light roux.
Slowly whisk in seafood stock, making sure there are no lumps.
Add crushed tomatoes, Cajun seasoning, smoked paprika, and cayenne. Simmer 8–10 minutes until slightly thickened.
Stir in heavy cream and milk. Simmer gently for another 5 minutes. Do not boil.
Return seafood to the pot and simmer 2–3 minutes until heated through.
Taste and adjust seasoning. Serve hot with fresh parsley on top.
